Sizzling summer salad

I am not a fan of tomatoes. Its really sad, I know, to be a dietitian and not eat tomatoes.  I mean they look SOOO stunning in a salad as they add such a beautiful burst of colour. Not to mention how many important nutrients they contain.

Being a tomato despiser myself, you may wonder why I’ve posted a recipe containing tomatoes. The answer is simple…I’ve finally found a way that I can enjoy tomatoes in a salad! So, I thought I would share the recipe with you:

 

Ingredients:

  • A punnet of baby tomatoes
  • A packet of baby spinach
  • A round of feta
  • A handful of sunflower seeds
  • Olive oil and balsamic vinegar

 

Method:

  • Put the baby tomatoes on a baking tray
  • Poke the baby tomatoes so that they don’t explode in the oven 
  • Drizzle olive oil and basalmic vinegar over the baby tomatoes and roast them in the oven
  • Put the baby spinach in a bowl and then pour the roasted baby tomatoes onto the baby spinach, and toss together
  • Then, add feta cheese and seeds and mix it all together
