Today is my amazing Gran's 86th birthday!
We had a wonderful celebration lunch with all of the extended family at my parent's house. I was asked to bring a salad...quite a good thing to ask a dietitian to bring to a lunch, I think. :)
I bought some fresh ingredients and then played around, chopped and tossed, and ended up creating this delicious chickpea salad.
Here is the recipe:
2 tins of chickpeas, drained
1/2 a purple onion thinly diced
1 red peper, 1 green pepper and 1 yellow pepper, each diced
1/2 - 1 cucumber, chopped
200g baby tomatoes, sliced in half
2-3 wheels/ rounds of feta cheese, cut into cubes
Toss all of the above ingredients together in a big bowl.
Enjoy with lots of other people, as this recipe makes a nice big salad!
