Delicious fish dish

People are very interesting in how they manage fish in their diets. Firstly, fish is something that people very definitively do or do not like...there isn't really a middle ground. Out of those who DO like fish, I find that most of my clients say that while they enjoy fish and would like to include it in their diet more often, they are hesitant as they don't know how to prepare it properly at home...enter this yummy fish dish! 

This recipe came from a friend of mine who made it for us just after our son was born. (Side note...if your friend has a baby...take her food...its literally the best gift you can give to a new mom.)

 

Ingredients: 

  • 4 hake fillets
  • 1/2 head of broccoli 
  • 1/2 head of cauliflower
  • A few baby potatoes (optional...you can leave them out if you want this to be a low carb meal)
  • Crushed garlic 
  • 1 can of coconut milk/cream 

 

Method: 

  • Place fish and broccoli and cauliflower florets into a baking dish 
  • Add a little salt and pepper to the fish, and cover it with the crushed garlic
  • Pour the coconut cream over
  • Bake in the oven at 180 degrees for 35 - 40 minutes
