I didn't realise that it was World Chocolate Day until late this evening! I know, I know...shocking for a chocolate-lover like myself! However, I must have intuitively known, because I spent the evening making delicious dark chocolate, date and coconut bites.
So, before World Chocolate Day is over, let me share with you this yummy and slightly healthier way to enjoy a chocolate treat.
2/3 cup pitted dates
1/3 cup desiccated coconut
1 slab of dark chocolate (see how dark you can go...aim for at least 70%)
Soak the dates in water for half an hour, and then drain water off dates
Blend/ mash the dates with the coconut
Roll the mixture into balls (I made mine little balls, but you can choose your size)
Melt the chocolate
Roll the balls into the chocolate
Allow to set in the fridge
