Ingredients:
- 1T olive oil
- 2 onions, diced
- 3 cloves of garlic, minced
- 500g mushrooms, sliced
- 200 – 400g baby spinach
- 500g broccoli/ green beans/ baby marrow (or a mix of these)
- A pack of chicken breasts, sliced into pieces
- A pack of lean back bacon, diced (optional)
- A tin of lite coconut milk
- Brown rice
Method:
- Fry onion and garlic in olive oil until onion is translucent
- Add mushrooms and fry until they are soft
- Add baby spinach and fry until wilted
- Add chicken (and pack of bacon – optional), and cook all together until chicken is cooked
- Add the tin of coconut milk and the rest of the greens, and allow to simmer until the greens are softened to your liking
- Serve on a bed of brown rice, and enjoy!
