Chicken, mushroom, greens in coconut milk – delicious recipe

Ingredients:

  • 1T olive oil
  • 2 onions, diced
  • 3 cloves of garlic, minced
  • 500g mushrooms, sliced
  • 200 – 400g baby spinach
  • 500g broccoli/ green beans/ baby marrow (or a mix of these)
  • A pack of chicken breasts, sliced into pieces 
  • A pack of lean back bacon, diced (optional)
  • A tin of lite coconut milk 
  • Brown rice 

Method:

  • Fry onion and garlic in olive oil until onion is translucent
  • Add mushrooms and fry until they are soft 
  • Add baby spinach and fry until wilted
  • Add chicken (and pack of bacon – optional), and cook all together until chicken is cooked 
  • Add the tin of coconut milk and the rest of the greens, and allow to simmer until the greens are softened to your liking
  • Serve on a bed of brown rice, and enjoy!
